There are several recipes of tarte au sucre around; some with brown
sugar only, some with maple syrup only, and some with a combination. I
never made any myself but my mother makes them often. Here are 3
recipes I got from her:
1) the simplest one: Brown sugar only
1/3 cup cream
1 Tbsp butter
1 cup sugar
Mix all ingredients together and add to pie crust
Bake until crust is golden to taste
2) another version:
2 cups brown sugar
6 tbsp of flour
1 1/4 cups milk
4 tbsp butter
Mix sugar and flour well
Add to milk and boil 3 mins
Remove from heat and butter
Mix well then let cool
Add to pie crust and bake at 450 for 25-30 mins.
3) Maple syrup:
1 cup milk
1/4 cup flour
1/8 tsp salt
2 cups maple syrup (the real stuff)
2 egg yolks
1 tbsp butter
Mix flour, salt, and syrup
Add to hot milk (not boiling, just hot)
Cook until thickens, stirring constantly
Add 3 tbsp of this to yolks (to warm up yolks)
Add above to hot mixture and cook another 3-4 mins
Remove from heat and add butter
Let cool and add to pie crust.
